So... Goodbye full fat food. That's alright. I think the only full fat food I'm in love with is bacon. OH and hot wings! But I cannot stand Turkey Bacon. It just tastes bleh to me. I don't eat a lot of bacon, it just happens to be in the Mashed Cauliflower (love) and a few other chicken dishes but I consume bacon maybe once every two or three weeks believe it or not and when I do, it's so minimal.
I went through ALL of my recipes in the past few days. All in word documents that I collected and reformatted them to make it easier for me to read when doing the recipes. The majority if not all are fine with a lower fat option so I don't have to reconfigure my lifestyle 100%. Just a bit to include more carbs and fruit. I don't consume a lot of fruit to begin with but darn it, if I want an apple with some peanut butter. I can have it! :)
Breakfast-
- 2 eggs
- Mushrooms
- Mozzarella (Ran out of cheddar but that's alright)
- Ketchup
- Same as yesterday!
- Steak
- Veggies
Update: The steak was perfect!!! But I wasn't in the mood for regular veggies so I made some mashed cauliflower. In a nut shell, I didn't have a recipe so I winged it.
- 1 bag frozen cauliflower
- 1 bar of cream cheese
- 1 stick of butter
- 2 cups of Mozzarella (I ran out of Cheddar!)
- Salt and a lot of pepper.
- Precook the Cauliflower in the microwave with some water for 6 minutes.
- I took my slap chop thingie and minced it as much as possible. Drained.
- Melted Butter and Cream Cheese together and mixed all the ingredients.
- Baked at 350 for 25 minutes.
- It was still watery but so good after I let it sit for a bit! Hubby loved it!
